Cream of Turkey Soup

Ingredients

  • 1 can full-fat coconut milk (I prefer Natural Value because it's gum free and packaged in BPA-free containers)
  • 1 can lite coconut milk (same brand)
    • 1 cup shredded turkey
  • 3/4 cup arrowroot starch 
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic

Instructions

Shred the turkey (I like to use my KitchenAid as it shreds perfectly!)  Whisk the coconut milk in a saucepan.  Add in arrowroot and spices and whisk together.  Add turkey.  Cook over medium heat until soup becomes thick.
